While growing up in Seoul, Korea, I loved the bold, spicy flavors of Kimchi. Now I have created my Kimchi Soup Bowl to share this special part of my childhood with you. In Korea, Kimchi is eaten at almost every meal and revered for its health giving qualities. This all vegetarian soup bowl is fast, healthful and great tasting for lunch or dinner. Microwave Cooking Directions
1. Place noodles in bowl and pour a cup of hot water over the noodles to soften.
2. Using lid, drain water from noodles.
3. Add soup base and toppings to moistened noodles.
4. Add 1 to 1 1/4 cups of water and loosely cover with lid.
5. Microwave on high for 1-2 minutes, until noodles are hot. (Caution! Bowl will be hot after microwaving.)
6. Stir well and enjoy!
No Microwave? Add 1 to 1 1/4 cups boiling water to soup base, toppings, and noodles. Cover with lid and let stand 2 minutes.
