Fresh Baby Spinach with Wild Mushrooms

Yield: 6 servings
1 8 oz package dry fettuccine
1 cup onion, diced
4 Tbs butter or olive oil
1 14.5 oz can Del Monte Organic Diced Tomatoes (well-drained)
1/4 Tbs cayenne
1 cup College Inn Organic Chicken Broth
1 1/2 cups heavy cream
2 1/2 cups cooked turkey, shredded
1 15.25 oz can Del Monte Organic Sweet Peas (drained)
1/4 cup fresh basil, chopped
1/4 cup parmesan cheese, freshly grated
Cook pasta according to package directions; drain and keep warm. Cook onion with butter in medium saucepan until tender. Add well-drained tomatoes, broth andcayenne. Bring to boil; cook until liquid is almost gone, stirring occasionally. Bring cream to boil in small saucepan; cook until reduced by about half. Stir into tomato mixture. Bring to boil; reduce heat. Stir in turkey, peas, basil and cheese. Toss cooked fettuccine with sauce. Serve with additional cheese and fresh basil, if desired.
