#10 Cans-- 25 Year Shelf Life
Mountain House® freeze-dried foods are packed in airtight NITROGEN PACKED #10 cans. Up to 98% of the residual oxygen has been removed. Thier unique canning process uses both vacuum oxygen removal and nitrogen flushing. This is a time consuming and slightly more costly process…but well worth it. It is the same process mandated by the U.S. Military for whom they also can. Thier foods will have the longest shelf life available…up to 30 years! Mountain House has been around for 40 years so they know first hand and invite you to compare. Each can is coated with a protective enamel inside and out for double protection, including the lid. The can contents are protected until you are ready to open and use them. After opening, Mountain House recommends using the contents within 1 week for best results and taste; using the convenient resealable plastic lid between uses. Treat any leftover food as you would fresh food.

Contains: Egg and milk.
To Prepare Entire Can:
1. Place contents of can 42.3 oz in mixing bowl
2. Measure 4 1/8 qts (16.5 cups) of COLD water. Do NOT Use Milk. Add the water to the egg mix and whip until smooth with a wire whip. Do NOT add additional water.
3. Pour about 1 quart egg mixture on lightly greased griddle, pre-heated to 325 degrees F (163 degrees C). Cook slowly to desired firmness, stirring occasionally. Eggs do not become more firm after removal from heat.
4. Serve at once.
To Prepare Less Than Entire Can:
1. Place 1 qt (4 cups) of dry egg mix in mixing bowl.
2. Measure 5 3/4 cups of COLD water. Do NOT Use Milk. Add the water to the egg mix and whip until smooth with a wire whip. Do NOT add additional water.
3. Follow steps 3 & 4 above for cooking and serving.
4. Makes 6 cups of cooked scrambled eggs.
This product can also be used to prepare Egg Omelet.
Reconstituted egg mix should be used within one hour unless refrigerated. Do not hold overnight.
It is necessary to store Mountain House products properly to ensure maximum shelf life. Store the product in a cool area, avoid long-term storage above 72 degrees F, and be careful to not puncture the cans. Under these conditions, Mountain House meals will maintain its shelf life for product quality, flavor and nutritional value.
Once open, contents should be used immediately. However, product resealed using plastic lid has been found to be acceptable up to one week after opening.
