Unlike the water-soluble form, which does not stay in the body for long periods of time, ascorbyl palmitate is stored in cell membranes, providing a ready, highly bioavailable source of this important nutrient.

Because ascorbyl palmitate is fat soluble, it may be more effective than other forms of vitamin C in protecting the lipid domains of cell membranes from free radical damage. It may also provide vitamin E (a fat-soluble antioxidant) with protection from oxidation.
