Cashews (Anacardium occidentale) are native to northeastern Brazil, where it is called by its Portuguese name Caju (the fruit) or Cajueiro (the tree). It is now widely grown in tropical climates for its cashew “nuts” and apples. Cashew nuts are the kidney-shaped seeds of the cashew apple which is the fruit of the cashew tree. The nuts have been called “nature’s vitamin pill,” being a rich source of vitamins, minerals, proteins and “good fats.”
The nutrient content of cashew nuts includes cooper, magnesium, phosphorus, potassium, protein and a high proportion of unsaturated fatty acids which help promote heart health. The ratio of saturated: monounsaturated: polyunsaturated fatty acids: present in cashews is ideal for human consumption—1:2:1—and ideal for promoting the health benefits of consuming foods with unsaturated fats.
