Our cacao powder is created by cold-pressing raw cacao nibs into a cake, which seperates the oil from the protein and fiber. The remaining dry cake-like material is cold ground, finely milled and sifted so that only the highest quality particles are used in the finished product. The temperature is monitored and kept below 120 degrees Fahrenheit. Our low temperature process preserves the delicate vitamins, minerals, antioxidants and enzymes.
