Arrowhead Mills Organic Pastry Flour -- 32 oz
Awful; Did Not Bind!
I purchased this because it was a "pastry" flour and promoted its "finer texture and lighter consistency" than other wheat flours. When I took my layers out of the cake pans, they began crumbling and falling apart. The only thing keeping the cake together is the frosting. Now I note the "lower gluten" mention on the label; perhaps that's why it didn't bind? I will likely throw the cake away. Sad waste of time.

Can't function without it
Thanks to this flour (which is better than any other whole wheat pastry flour - I've tried) I can enjoy eating cake without feeling too guilty. Not only that, the cake becomes filling with all the fiber, so you don't eat as much. Kids love it, always asking for more! I always have a stockpile of this flour at home.

I live at 4300 altitude and none of my baked goods would rise and be pretty. A friend who's baking is always blue ribbon perfect told me about this product. It works everytime.

Pizza Dough with Pastry Flour
I made pizza dough using half pastry flour and half bread flour and it was great ! Everyone should try it.
