Spelt flour is good replacement for wheat.
This was my first time using spelt flour instead of wheat. I thought the taste was about the same, but it did not rise as much as wheat. Probably best combined with other flour and not in bread machine.

Wonderful flavor and texture
I've used spelt for several months now as a healthier alternative to mass produced white flour. I am delighted to find it here at Vitacost for such an excellent price compared to my grocer. Adds great texture and nuttier flavor to baked goods, more dense so start off by substituting half of flour called for in recipes and adjust according to your tastes.

I think it tastes a lot like whole wheat.... I used it in waffles and cookies and you really couldn't tell the difference. It's very good, but the bag is really small for the price. Overall, I thought it was good and did purchase a second bag.
