Apricots are small, light orange stone fruits that grow on the Prunus Armeniaca tree, originally from China but cultivated in Armenia and Persia in ancient times. They were brought to the U.S. by early European settlers and are grown primarily in California, Washington and Utah today.
Apricots—eaten fresh or dried—have a smooth, not-too-juicy flesh and light, almost plum-like flavor. Their orange color is indicative of their high beta-carotene content. Beta carotene is an antioxidant and pigment responsible for the orange color of carrots, sweet potatoes and other fruits and vegetables. It is converted into vitamin A in the body. Apricots are also a good source of fiber, potassium and other nutrients.
