We are delighted to bring this versatile cake mix to your home. Made with a perfect blend of gluten free flours and starches, this mix can be easily transformed into your favorite custom cake or cupcake recipes that call for a white cake, or simply bake as directed for a delicate vanilla cake.


Directions

Ingredients You Will Need:

1 whole package Bob's Red Mill Vanilla Cake Mix

3 large whole Eggs, at room temperature

1/2 cup Vegetable or Canola Oil

1/2 cup Water, at room temperature

 

Preparation (for 9-inch layer cake)

Preheat oven to 325 degrees. Generously grease two 9-inch round nonstick (gray, not black) cake pans. Line bottoms with parchment paper or wax paper, then grease again.

Mixing

In large mixing bowl, beat eggs for 30 seconds on medium-low speed. Add mix, then oil and water. Beat for 60 seconds on medium-low speed, scraping down sides of bowl with spatula. Divide batter evenly in pans; smooth tops with spatula.

Baking

Place pans 3 inches apart on middle rack of oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool cakes in pans on wire rack for 15 minutes. Run sharp knife around edges to loosen cakes, then invert onto separate plates to cool completely before frosting.

Better than non gluten free cake mix! We used this mix to make a theme cake for our 2 year old's birthday (since my husband is gluten intolerant). I added 2 tsp. of pure vanilla for a little more flavor and the cake baked very well, and was easy to handle and decorate. We did grease, line the bottom with wax paper, and greased again just as the directions called for, and the cake did not stick at all. We will use this for all of our cakes in the future. You can change the flavor by adding 1/2 cup cocoa powder if you want a chocolate cake. January 23, 2013

Best Cakes Bob's Red Mill GF cake mixes are the only brand that I use. I've tried others, and to me these mixes produce the best cakes. While their chocolate is my favorite, the vanilla cake is still very good. But the texture is not quite the same. I think it's just a little more spongy, but it's far superior to other brands I've tried. One thing I've found is that you can make a few healthy substitutions when making these cakes, and still get excellent results. Unsweetened applesauce can be substituted for all or part of the called for butter/oil, and I always use either egg whites or Egg Beaters instead of whole eggs.
