Stone ground, whole grain cornmeal and sorghum impart an unmatched flavor and texture from another era to this Gluten Free Cornbread Mix. After easy preparation, you will bake perfectly moist and light cornbread.


Directions

Cornbread Mix Directions

1½ cups Milk (rice, soy, dairy)

1/3 cup Oil or melted Butter

2 Eggs

 

Have all the ingredients at room temperature. Preheat oven to 375 F. Generously grease a 9 x 9-inch gray, nonstick pan. Place entire package of Bob's Red Mill Cornbread Mix in larger mixer bow. Add 1½ cups milk, 2 large eggs and 1/3 cup canola oil or melted butter. Mix on low speed with electric mixer until blended. Beat another 30 seconds with mixer on high. Pour into baking pan. Bake 25 minutes or until nicely browned.

Cornbread this is my first time using gluten free products so I do not have anything to compare it to; however, we liked the end product. the consistency is like bread dough, which is different for cornbread but, it works for me. I will use it again and probably tweek it with more coconut sugar. that's pretty much what I have seen the gluten free bakeries do - add more sugar to correct the taste. mmmmmmmmm We'll see. pretty good! This cornbread mix has a very fine crumb. I've found that the baking time is always longer than the package asks for, so be sure to check before you let it cool completely in case it needs to go back into the oven. But- it tastes great. It's not too sweet. And it the cornbread freezes well. February 5, 2015
