I use this for bread all the time This product has been wonderful for me to make gluten free bread. I have developed a recipe that uses a bag each of Bob's Red Mill Garbanzo and Fava Flour, Bob's Red Mill Brown Rice flour and Bob's Red Mill 'Sweet' White Sorghum flour. It is easy just to throw in a whole bag of each of these flours without having to measure and still end up with a great loaf of bread. September 26, 2014
Easy way to lower or remove gluten in quick breads Either reduce the wheat flour or fully replace it with flours like this one. I make a simple (heavy) quick bread and this is one of the non-gluten flours I use. My recipe asks for 3 cups of flour, then 2 cups of water, and 2 tsp of non aluminum baking powder, 1 tsp of salt--easy! Then if you bake it at a low temp. of 200 degrees Farhenheit, you will not have the acrylamides that can occur when you bake at higher temps. I bake it for about 2 hours. I use a mixture of flours for my quick bread, and no more than 3/4 cup of each flour (3/4 cup of this bean flour). It's heavy, but if you add almond butter and home made jam (mine is sugar free with stevia) it's good! let a slice of the bread toast at a low temp (200 or less F.), then it will be safe too. Strong Flavor I used this flour to make chocolate cupcakes and the flavor of the beans was strong. Also it was not as cakey as other gluten-free flour mixtures I have experimented with. I did use agave nectar so maybe the results would have been different with sugar. April 2, 2013
