Delicious, good texture
I've made these a few times since I've reduced gluten in my diet and was missing pancakes. They're easy to make and cook pretty much like regular pancakes, similar texture. Sometimes I add spinach to get some more nutrition in for my toddler son. Overall recommend.

One Word: Crepes
One day I just NEEDED crepes. I've been gluten-free for a while now, and I hadn't eaten a crepe in a couple of years. But I just NEEDED one (or two).
So, I whisked 1/2 cup of milk with 2 whole eggs. I added 1/2 cup of this mix, and I blended until smooth. Heated butter in my crepe pan, poured in the batter... Watched as it swirled around the pan- it spread like regular crepe batter. I flipped it- it had browned like regular crepe batter. And I took it out of the pan and filled it with fruit. Took a cautious bite....
Yum. I can't tell you how happy I was. Being gluten-free isn't the easiest thing. Most of the time I eat grain-free. But when I want some crepes? I'm happy to say I can make some great crepes!
