Bob's Red Mill Homemade Wonderful Gluten Free Bread Mix Description

For bread machines or by hand. Specially designed for those sensitive to wheat or gluten. This moist flavorful bread is ideal for sandwiches, toast, bread crumbs, croutons and other dishes that start with a basic loaf of bead. Contains a blend of gluten-free flours. Bob's Red Mill products labeled Gluten Free are batch tested in our quality control laboratory. We use an ELISA Gluten Assay test to determine if a product is gluten free.


Directions

Baking Instructions by Hand (for Conventional Ovens):

1 2/3 cups warm water (110°) Milk (cow, rice or soy)
1 whole Egg plus enough Egg Whites to equal 3/4 cup
1/4 cup melted Butter or Vegetable Oil
1 tsp. Cider Vinegar

Place contents of package in large bowl of heavy-duty, tabletop mixer. Remove yeast packet and add yeast to warm mill in separate bowl. Let foam for 5 minutes. Add eggs, melted butter or oil, vinegar, and yeast-milk mixture to bread mix. Mix with regular beaters (not dough hook) at medium speed for 3 minutes, scraping down sides of bowl with spatula as necessary. Place dough in greased 9 x 5-inch nonstick pan. Smooth top of dough with wet spatula. Cover with oiled aluminum foil or plastic wrap and let rise in warm (75-80°) place until dough is level with top of pan (approximately 25-35 minutes). Remove cover. Bake at 375° for 60-65 minutes (do not underbake). Cover with foil after 10 minutes to prevent over-browning. To test for doneness, tap loaf with fingernail. A crisp, hard sound indicates a properly baked loaf. Turn loaf out on to wire rack and cool thoroughly before slicing.

Baking Instructions for 1-1/2 lb Bread Machine

1 2/3 cups Milk (cow, rice, or soy)

1 tsp. Cider Vinegar

Remove yeast packet from package. Have all ingredients at room temperature. Follow your specific machine instructions for adding yeast and the liquid and dry ingredients in the proper order. Be sure to whisk milk, eggs, melted butter or oil, and vinegar together thoroughly until very smooth before adding to bread machine. Set controls for setting recommended by manufacturer or setting you prefer. Remove baked bread from bread machine and cool thoroughly on wire rack before slicing.

Gluten Free Bread Mix Since learning I have a gluten intolerance it has been a daunting task to become gluten free. So, I am trying every thing to rule out what I don't like and what I do like. Bob's Red Mill products are fabulous and very helpful in reaching my goal. I actually really liked this bread, the texture was great. I made the bread in my bread machine and it came out really nice. My only drawback is the taste is different; which, to my dismay is common in gluten free products. Next time I will add raisins or other flavor enhancing food items to experiment with improving the flavor. March 21, 2014
easy to make, versatile I make this in my bread machine - just throw it all in and set for regular loaf. The bread is very good - a little dry, but that's gluten free for you! I keep it in the fridge and it lasts for at least a week. A suggestion: use flavored olive oil, like lemon, to punch up the flavor. March 14, 2014
Wonderful!!!!!!!! I made this bread in my bread machine and it came out delicious!! I was so tired of buy gluten free bread and throwing it away or eating it and feeling like I didnt eat bread at all. It just had not taste or texture like the bread I usually eat. I love toast and eggs in the morning and now I can have it again and feel like I am eating real bread instead of cardboard!! I will definately be ordering this again. March 5, 2014
great fresh bread This is great for homemade, fresh bread (using our bread machine); however, even in a vacuum-sealed back this bread gets very dense and mealy within a week. It is still good for croutons or dressing, but not sandwiches after a week. March 4, 2014
