Beans, peas, and lentils are natural agricultural products. Despite use of modern agricultural equipment, it is not always possible to remove all foreign material. Sort and rinse before cooking.
Mung Bean Sprouts
1/3 cup dry Beans
1 cup cool Water (room temp.)
Rinse beans until water runs clear. Place in bowl or jar, add water, cover jar with clean cloth or mesh and leave to soak at room temperature for 8 to 12 hours. Drain, rinse and then repeat draining and rinsing every 8 to 12 hours, leaving in low light between rinses. Repeat for 2 to 3 days for bigger sprouts (what you normally see in stores and restaurants). No need to rinse when they are ready. Place sprouts in bag or sealed container and keep refrigerated. Good for 7 to 10 days.
Stovetop Cooking Instructions
Combine 1 cup mung beans and 3 cups water and bring to a boil. Cover and lower heat to a simmer. Cook until soft, about 30 minutes. Makes about 2-½ cups of cooked beans.
Keeps best refrigerated or frozen.
