I have found xanthum gum to be an almost essential ingredient in gluten-free baking (to prevent gummy baked goods.) It seems expensive but a little goes a long way.

I never thought I'd be buying Xanthan Gum but needed it for a cake. I'm not sure exactly what it did, but the cake turned out very well. All these new types of flours and ingredients are new to me and I'm still experimenting with them. Fun times!

The product is a great thickener.
Bob's xanthan gum is an economical, healthy and excellent thickener. Since I make my own vinegar and oil salad dressings, just the tiniest pinch of the gum thickens the dressing so that it has the consistency of bottled dressings--but much better.
