I use this a lot in my gluten-free baking. It works great to hold the ingredients together; otherwise, things would crumble.

Can finally make my own ice cream without all the added sugars and such. It is expensive but the recipes do not call for a lot so this bag will last you a long time!

Great for Gluten-free Baking
I have found xanthum gum to be an almost essential ingredient in gluten-free baking (to prevent gummy baked goods.) It seems expensive but a little goes a long way.
