Xanthan Gum
Xanthan Gum replaces the function of gluten (the *sticky* agent) in flour -- important for those of us who have determined (or have been forced to because of digestive issues) to take a more health-conscious path. Ideally, the flour should be organic to boot -- that way all the chemicals sprayed nowadays on conventional crops won't be an issue for you.

Although most stores carry Bob's Red Mill products, they do not carry xanthum gum. Vitacost carries it, sells it at a fair price and promptly delivers it. This a good part of why local stores are being replaced by good online suppliers. I will certainly keep Vitacost on my list of good places to go for things they carry.
Once before I had trouble with ordering from them, but not this time. This time they accepted the password they approved last time but would not let me use or get another. No problem with it now.
This time I cannot find the send button after writing this.

This product helps to get the proper consistency when baking with gluten free flours. I would definitely recommend it.
