Bob's Red Mill Tapioca Flour
I use this when I bake and make pancakes. I make a gluten free flour mixture, usually of buckwheat, sweet sorghum, tapioca flour, and sometimes quinoa. The tapioca seems to make the final product lighter and helps with browning. I use about 1/2 cup tapioca flour to 5 cups other flours.

GREAT wheat substitute!
We no longer eat wheat, so have been on a quest to find good flour alternatives. This is it! Mixed with rice or garbanzo flour = a great baking/cooking flour. The tapioca flour is finely ground (similar to cornstarch) and adds a tender quality to baked goods.

Good flour alternative
This is also a good subsitute for powdered sugar. It has the same texture.

Light and fluffy
I like to add this to my whole grain recipes with kamut ,spelt or any other 100% whole grain flour to give it a lighter texture and taste.
