Bountiful Pantry Gluten Free Soup Black Bean Description
Taste the Caribbean right at home with this hearty, easy to prepare soup. Black Beans are cooked with flavorful onions, bell peppers, garlic and just the right amount of spice. Easy to make, easy to serve and enjoy just as is, or add your personal touch with a meaty ham bone, rice or a sour cream topping. Serve with a wedge of lime for extra zing! Turn it into a Brazilian Black Bean Soup when you serve with sherry and sliced eggs. Tasty the day you make it, even better the next day. Preparation time is less than 15 minutes. Makes 8 servings.
Additional Ingredients: 4C broth
1. Rinse beans. Add 4 cups water + 4 cups chicken or vegetable bouillon or broth along with vegetable and seasoning packet. Stir.
Optional: Add a meaty ham bone or ham hock.
Stove Top: Bring to a boil. Partially cover and lower heat. Cook till bean are tender, 2 hours.
Or Slow Cooker: Cook for 6-8 hours on LOW; 3-4 hours on HIGH according to your cooker's directions. If using ham bone or hock, remove from soup and dice meat. Add meat back to cooked soup.
2. Remove bay leaf. To thicken: Take 2 cups cooked soup & blend in food processor or mash with fork. Add to soup with 2 Tbsp vinegar. heat 15 minutes.
