The old wives tell a tale about a traveling gentleman who stopped by a New Orleans inn which had little food remaining from the evening meal. The traveler instructed to cook, "Jean, balayez!" or "Jean, sweep something together!" in the local dialect. The guest pronounced the resulting hodge-podge as "Jean balayez!" and a new dish was born. Classically made with a sausage, chicken and shrimp, Jambalaya is a smoky and flavorful rice dish brightened by tomatoes. If your tastes are adventurous, try this with a spicy andouille sausage; if you prefer the mild side, go for a chicken sausage. The chicken and shrimp lend great flavor and texture to this dish, but it holds its own without either. Classically made with a sausage, chicken, and shrimp, Jambalaya is a smoky and flavorful rice dish brightened by tomatoes. Cajun Jambalaya originates from the French Quarter in New Orleans and is as vibrant as the city itself!

Cooksimple meals are based on leaner protein, lower sugar, and higher fiber so you feel full with fewer calories.
With a busy lifestyle, a young family and an extra 40 pounds, I didn't understand healthful eating and sure didn't have time for cooking. Years later, after learning better eating begins at home, I created a simple solution for nutritious home-cooked meals that works for today's hectic schedules. I hope these help you and your family, just as they've helped me and mine!
