The old wives tell a tale about a traveling gentleman who stopped by a New Orleans inn which had little food remaining from the evening meal. Classically made with a sausage, chicken and shrimp, Jambalaya is a smoky and flavorful rice dish brightened by tomatoes. If your tastes are adventurous, try this with a spicy andouille sausage; if you prefer the mild side, go for a chicken sausage. The chicken and shrimp lend great flavor and texture to this dish, but it holds its own without either. 8 oz chicken andouille (or andouille) sausage, cut into ½" pieces (if precooked add in Step 3).
1 lb shrimp deveined and tails removed (if precooked, add in Step 3).
15 oz diced tomatoes.
1 Tbsp olive oil
