History tells the tale of a traveler who stopped by a New Orleans inn that was rationing food for supper. The traveler told the cook "Jean, sweep something together!" or "Jean, balayez!" in the local dialect. Bam, Jambalaya was born; a smoky, flavorful rice dish certain to fuel your travels.

14.5 can of diced tomatoes
1/2 lb chicken andouille or andouille sausage or tofu
1 lb shrimp (peeled and deveined) or tofu
Optional Toppings: Sliced jalapenos • Fresh cilantro • Hot sauce
Variations: Cajun wrap
Ready in about 30 minutes
Brown 1/2 lb chicken andouille sausage and 1 lb shrimp (peeled, deveined, and tails removed) for 8 mins in oiled or non-stick skillet before continuing.
Pour jambalaya mix into skillet
Add 2/3 cups water
Add 14.5 oz. diced tomatoes
Heat on high until boil
Simmer on med-low for 18 mins or until rice is tender
