The selection of the best durum wheat which guarantees a greater firmness of the pasta whilst cooking.
Kneaded with cold water (under 15C), that assures a sweeter taste and a better firmness during cooing.
Suggested for Perfect Cooking: Use 6 quarts of water per 1 lb of pasta. Bring water to a boil and add a pinch of salt and the pasta. Stir from time to time. Cook for 2 minutes, drain and season.
