All de la Estancia organic polenta is produced by the four families that own Buenaventura Farms, an Argentine farming company. The variety of corn that we use to make our polenta is very different from the corn grown in other parts of the world. Our growing season is longer than in the northern hemisphere and our sub-tropical corn is specially suited for polenta. Argentine corn is higher in protein content and much lower in starch content than common corn and can be milled to a finer consistency. Any recipe you make using de la Estancia polenta will be smooth and creamy.

The words de la Estancia is Spanish meaning "from the farm" and de la Estancia organic polenta is truly from the farmer to the final consumer. There are no middlemen. All the polenta in this bag originated on one single farm. We can trace the polenta in every bag back to the moment when the corn seeds were planted. de la Estancia polenta is not pre-cooked and is not processed but because of its low starch content and fine grind it cooks naturally in just 1 minute!

What is polenta? Polenta is a word used in Italy and Latin America to mean a form of ground corn as well as a cooked dish made from the ground corn. Traditional polenta is made by adding dry polenta to simmering liquid, usually in the ratio of 3 parts liquid to 1 part polenta and stirring on the heat until the polenta reaches a consistency like thick porridge. A variety of liquids work equally well as a base, including water, chicken broth, milk, beef broth and vegetable broth. Polenta makes an excellent main meal or side dish. It absorbs sauces and juices especially well and is a substitute for pasta, cous cous and rice. Italians serve it straight from the pot with any pasta sauce they would serve with pasta. It can also be cooled to form a soft cake that can then be fried, baked or broiled.

Excellent product This product is delicious and very easy to cook. June 30, 2014
My Fave Polenta I just love this polenta. It tastes so much better than any other polentas I've tried and I am not sure why. It's very finely ground and has a perfume-ish like after-taste. I like it with either butter or coconut oil. Enjoy. May 15, 2014
Great Product Easy to Cook--almost no standing and stirring-I have had grits that took half a hour of stirring and were still dry -- April 26, 2014
Smooth, rich corn taste, quick This polenta is indeed very fast cooking. Part of the cooking time is the resting time after the 1 minute simmer is finished. I like to cook mine in a mixture of water and 2% milk for an extra creamy texture. I make small amounts for myself (1/4 cup dry) and I find that I don't get lumps if I mix the liquid and polenta together and bring them to a simmer stirring frequently in contrast to what the package direction say (heating liquid then pouring in polenta) but for larger amounts I think clumping would happen with my method, I just wanted to share it in case it helps anyone like me who makes small amounts. I cook mine in a enamelled cast iron pot, stirring with a wooden spurtle. April 6, 2014
Good consistency I use this product in a facial scrub. All of the other polentas are too large or granules that are too abrasive for the skin. These granules are small and work perfectly in my scrub. Vitacost also has it at a good price for Organic. December 9, 2013
