great for us!
Our son is allergic to gluten, corn, rice and potatoes (among many other foods), so I actually gave up on trying to find pasta for him... When I saw this product I could not believe my eyes, but I got only one package because I was suspicious there might be some hidden ingredients. Looks like it's just buckwheat flour (and I guess water), and our son loves it! The pasts can get mushy when re-warmed, so we cook it in small batches, just for one meal. It's not a problem for us, since we are happy to have any pasta we can serve our son :D

Good consistency, but expensive
For 100% buckwheat soba, this one holds up much better than some others, the noodles don't break as easily. It is rather expensive though, for a family of 4 you would need at least 3, more likely 4, packages of these to make a full meal. But if you are craving100% buckwheat soba and can't drive to a Japanese market, this is a good choice. If you don't have to avoid gluten, though, you can get cheaper (and deliciously chewy) buckwheat-wheat combination soba, which are more readily available at grocery stores.

Perfection
These noodles are perfect in texture and flavor. Easy to prepare, versatile, and my daughter who has a corn allergy can eat them safely! Expensive, but that's why we buy them here.

Awesome product - I can only eat buckwheat, amaranth, quinoa and these are a great way to enjoy pasta

Great Product
Its great to have a non-cereal grain (seed) product to use for a familiar meal. Goes great with any sauce.
It does tend to absorb sauces and stick together, so I adjusted my sauces to be extra liquidly. Problem solved.
