To Prepare:
Soak: Wash beans, cover with 3 inches water. Soak 6 to 8 hours or overnight. Water plants with soaking water.
Or: Place in a pot with 3 inches water, bring to a boil, turn off flame, cover, and let sit 11/2 hours. Discard soaking water.
Cook: Place 3 cups of water per 1 cup of soaked beans in a heavy pot. Bring to a boil. Cover, reduce flame, and simmer at least 1 1/2 hours.
Note: 1/2 cup dry beans = 1 1/2 cup cooked.
