Edward & Sons Let's Do Organic Creamed Coconut -- 7 oz
Organic Creamed Coconut
When looking for a coconut milk that has nothing in it BUT coconut milk, it brought me to this box of creamed coconut. I knew it had to be a solid if it came in a box. I LOVE this stuff so, In my opinion, it is well worth the extra effort since the oil separates from the coconut and needs to be mixed back together. It's wonderful in smoothies and whenever I have a craving for something sweet, I cut myself a piece which squelches my craving. To me it's like an Almond Joy w/o the chocolate. I place two packages into a small pan of hot water and when it softens enough I mix the oil and the coconut back together in the bag with my fingers and then empty the packages into a small rectangular Pyrex dish. I then put it in the fridge for 1/2 hr. to harden it a bit. I put the cover on the Pyrex dish and leave it out until I use it up which hasn't lasted longer than a week yet! Leaving it in the fridge makes it hard to cut. Leave it out and it's a breeze to cut off tasty morsels to munch on or to add liquid to for all sorts of other creamy delights. Yum!

I tried this after a recommendation from the book, The Swift Diet. I've used it in soups and for smoothies. It's a nice alternative to the canned variety...no additives and less expensive. Vitacost has the best price.

This is great for making a quick, fudgy dessert.

good quality and organic
the reason for 3 stars rating is I need to use only 1/3 of the package each time and it has to be refrigerated after opening. Once refrigerated, it gets as hard as a rock and until you warm it up, it can't be separated. The taste is too sweet for me, but I believe this brand was proved to be of a good quality.
I will most likely not buy this brand any more for above reasons.
