Big box but small package
Good product, works as it should. My only complaint is that they use a big cardboard box to store a little packet of the starch inside. While the product is clearly 16oz, I feel the packaging shown is quite deceiving for what you actually receive. They could fit at least 32oz into that box. I can't give 5 stars for a product from a company wasting that much packaging...

The first flour I reach for.
This is much lighter than rice flour, and less apt to gum up like tapioca flour, although both of those flours work well if you want something heartier (use rice flour) or gummier (use tapioca flour). I've had pretty good luck doing experimental baking and pan-frying with this potato starch flour, and sometimes I add a little bit of Ener-G rice flour to give it just a little more foundation.
Two parts of this flour plus one part of rice flour, along with a good dose of garlic powder, salt, and paprika, makes for a great chicken tenders or chicken nugget coating. One egg, canola oil, honey, potato starch flour, a little rice flour (optional), baking powder, and water make what I call "weird pancakey thing" that tastes pretty good and would probably make more proper pancakes with a bit more experimenting.
