Carob is part of the legume family whose cultivation dates back to historic times.
The tree produces an edible seeded fruit pod that the ancient Egyptians, Greeks and Romans are said to have eaten raw for natural sweetness.
Our truly raw carob powder originated from Peru, where careful processing has kept the drying temperature below 115o.
The pods are ground into a powdered form and used as a popular chocolate substitute since it only contains one-third the calories of chocolate (cacao), and it is virtually fat-free.

Carob does not contain caffeine and is also not considered an allergenic food like chocolate. Carob provides polyphenols and flavonols which act as antioxidants to help fight free readicals which may cause disease and hasten the effects of aging as noted by German researchers in the "Journal of Agriculture and Food Chemistry" published in June 2004.
Use as an equal replacement for cacao in your favorite recipes, or use 3-tbsp carob powder plus 1-tbsp water in place of each square of unsweetened chocolate.
