Gluten-Free Banana Bread

• 1 3/4 cups all-purpose gluten-free flour
• 1 1/2 cups ripe bananas, mashed
• 1/3 cup organic coconut oil
• 1 tsp vanilla extract
• 2 large eggs
• 2/3 cup brown sugar, tightly packed
• 1 tsp xanthan gum
• 1/2 tsp sea salt
• 2 tsp baking powder
• 1 1/4 tsp organic cinnamon
• 1/2 cup finely chopped pecans or walnuts

Preheat oven to 350˚ F and grease a 9 x 5 bread pan.

In large bowl, beat together coconut oil, vanilla, eggs and sugar. In small bowl, mix together flour, xanthan gum, salt, baking powder, and cinnamon. Mash bananas in another bowl.

Slowly add the dry mix and bananas into the wet mixture, stirring until smooth. Toss in nuts and continue mixing.

Pour batter into pan and bake for 45 minutes to 1 hour or until a toothpick inserted into the center comes out clean.
