Our Lentil Medley is a lively blend of French Green, Petit Crimson, Golden, Black Belusa, Spanish Pardina and Ivory White Lentils. Lentils are high in protein and cholesterol-lowering soluble fiber, and have about twice as much iron as other legumes.
Lentils are a versatile ingredent to be used in soups side dishes, mixed with rices, vegetables, or as delicious salad. Dried lentils can also be sprouted by leaving in water for several days, which further enhances their nutritional profile.
Basic Preparation: Wash lentils with cold water, check for a discard any imperfections. Simmer 1 cup lentils with 4 cups water 6-8 minutes for salads, 10 minutes for main dishes and 20 minutes for soups and purees, drain. Skim the water while cooking.
