In Khmer this aromatic rice is called Phka Malis, which means jasmine flowers. Leaving the germ and bean layer intact gives Mekong Flower Rice its rich nutty taste and high nutritional value. With its pleasant soft texture and fast cooking time, you won't think you're eating a whole grain!
Combine 1-3/4 cups water, 1 cup rice and a pinch of salt. Bring to a boil over High heat. Cover, reduce heat and simmer for 30 minutes. Remove from heat. Let stand covered for a few minutes. Fluff and serve. A rice cooker may be used with the same water-to-rice ratio. 1 cup raw rice yields 3 cups cooked rice.
