Dairy-Free Nana-Coco Ice Cream
- 2 medium bananas
- 1/2 cup Blue Diamond Natural Almond Breeze Original Unsweetened Non-Dairy Beverage or Native Forest Organic Coconut Milk Light, or 1/4 cup of each
- 2 (12.3-ounce) boxes firm Mori-Nu Organic Silken Tofu, drained
- 1/2 cup Wholesome Sweeteners Organic Raw Blue Agave
- 1 tsp. Flavorganics Organic Vanilla Extract
- 1/2 tsp. Hain Pure Foods Iodized Sea Salt
- 1 cup Let’s Do Organic Unsweetened Coconut Flakes
- Process bananas and dairy-free milk(s) in a blender, until creamy.
- Add tofu, agave, vanilla and salt; blend until smooth.
- Mix in coconut; then pour into a 9” x 13” pan, or other shallow metal dish.
- Place the pan in freezer.
- For the first two hours, whisk the mixture every 30 minutes to prevent ice crystals from forming.
- After two hours, cover with plastic wrap and let it rest for another 30 minutes to an hour.
- Scoop up and enjoy!
