An excellent product!
This is an excellent muffin mix! We love adding blueberries, along with mashed bananas. The mixture yields moist, delicious muffins! My husband loves 'em!

Very good muffin mix!
I love this muffin mix. Gluten free, dairy free & sugar free. I do add a few drops of stevia and some cinnamon to give it a little flavor. I've also added chopped strawberries... yummy...

Tricky mix when egg-free but still good.
I have to make this egg-free, which means my muffins don't rise very well & tend to be heavy. Still, my kids enjoy them & that's good enough. To make these better & sweeter, I have made these mods with good results: 1. Be sure to whisk the dry mix & remove any lumps. 2. When measuring the water or juice, I put in 1/3 cup agave first, then fill to the one cup line. 3. Per Namaste's website, when using pre-ground (store bought) flax meal, I use 2.5 tablespoons per egg instead of the usual 1 tablespoon per egg. (See their website for full details - you also need to adjust the fluids in the recipe.) 4. I pre-mix my flaxmeal "gel", oil & water/agave before adding to the muffin mix. 5. I make sure the bottom gets mixed as well as the top. (At least, I think #5 helps. I worry that I'm overmixing, but I did one batch with less mixing and it didn't seem to make a difference.) I have tried both hand mixing and electric mixing. Electric does well but probably overmixing whereas hand mixing doesn't seem to do enough. Perhaps I need more water in my mix as one reviewer suggested...I'll have to try that next time!
