Super Yummy Scones and Gluten Free!
I use this mix to make Maple Oat Nut scones. I add a bit of maple syrup, a bit of oats and walnuts. The result is super yummy, not too sweet and a perfect baked treat for those who follow a gluten free diet! I will sometimes sprinkle "birch sugar" on the top which is a low glycemic sweetner. We also order this from Vitacost - It's called "The Ultimate Sweetner" and tastes just like sugar without the sugar rush. Pamela's Scone mix is versatile as I've also made lemon poppyseed scones, my husband's favorite. For a healthy baked treat this is the best product I've found.

Tried this today for the first time. Made the scone recipe and put in half the sugar called for (as I do not like a sweet scone). The scones turned out crispy on the outside and moist on the inside, just like I like them. In fact, much to my surprise, they were some of the best scones I have ever had, and far better than any you typically get in the US. This mix makes six large scones. Buying some more mix now to try the biscuit and shortbread recipes! However, I can tell by how the scones turned out that they will be great too. Highly recommend, even if you are not gluten sensitive.

Great Gluten free product
My daughter is gluten intolerant and this scone mix is the best. I have taken them to parties and people always enjoy them.

On the side of this mix is a recipe for shortcakes. We went and picked over 12.5 pounds of PYO strawberries...shortcake was destined to happen! I thought I would have to search recipes, but there is it was on the side of this mix!! These were the best shortcakes I think I've ever had :-) The recipe is simple and the process was exactly like traditional shortcakes so the texture was perfect--soft, crumbly, slightly sweet. Better than mom used to make (sorry, mom). The recipe says to make 8 large...these are large enough that we only ate half at a time, so next time I make them i'll make 16 smaller ones and watch the end of the baking time closely.
