enjoyed this cookie for a change I found this one a favorite mix. While others tasted grainy and dry. The cookies where better than hoped for with texture and taste being near perfect. Not dry or difficult to chew like some mixes. Pamela has perfected their products of gluten free-mixes. Ya. December 26, 2012

Pamela's Choc Chunk Cookie Mix You really can't go wrong w/ Pamela's brand of wheat free food. These were the easiest chocolate chip cookies I've ever made. They were scrumptious. Even my family, who normally doesn't like anything that's wheat free, loved them. Highly recommend. April 29, 2012

Pamela's Incredible Chocolate Chunk Cookies

1 bag Pamela's Mix
1 cube butter or margarine (8 tbsp)
1 egg (large) or egg replacer (prepared)
Yield: 18 to 20 cookies

Using Heavy Duty Stand Mixer: Preheat oven to 350*. Soften 1 cube (8 tbsp) butter or margarine in a bowl. Add Pamela's Mix and one large egg (or egg replacer). Mix together for 1 full minute or until dough is fully incorporated. Add 1 tbsp water if dough appears dry or crumbly. Place heaping tbsp scoops of dough on greased cookie sheet and lightly flatten. Cookies will spread when baking. Bake for 17 to 20 minutes. For crispier cookies, increase bake time. Remove cookies with spatula from baking sheet while still warm. Cookies will have a darker color due to cocoa powder in the mix.

Hand Mixing: Preheat oven to 350*. Melt seven (7) tbsp butter or margarine. Let cool. Add Pamela's mix and one large egg (or prepared egg replacer) and mix until completely incorporated. Dough will appear dark and slightly crumbly. Press together heaping tbs dollops and place on greased cookie sheet. Lightly flatten and bake in for 16 to 18 minutes.

Variations: 1/2 cup nuts - walnuts, macadamia, or pecans, 1/4 cup additional dark chocolate chips, and/or white chocolate chips, peanut butter or butterscotch chips.
