Ha. Changed my mind....
I had thought these were nothing to write home about...then I warmed them one day to get them more crispy or just tastier.
Well they did not get crispy but they got more lemony and I like them warm.

FANTASTIC!
These cookies are so fantastic that I actually can't buy them anymore. They're supposed to be for a now-and-then treat for my gluten-free son...but if I keep them around, I end up eating most of them myself. :) If you have more self control than I do, you'll love them.

Delicious! Improved with Agave
These cookies are amazing! Soooo good and buttery! I love shortbread, and while nothing can compare to the genuine sugary shortbread from Britain, these come pretty darned close. In fact, these taste even better than most of the genuine sugary shortbread offered by non-gourmet cookie makers. I will agree (with other reviewers) that the texture is softer and not as crisp as traditional shortbread, but in my opinion, the intense butter flavor and richness makes up for that. Add that these are now sweetened only with Agave (lowest food on the glycemic index, so zero effect on insulin levels) and you have the perfect cookie. I can eat these guilt free. Most of the reviews here are for the original version of this cookie - fruit juice sweetened - and I've never tried those, so my review is only on the newer ones (with agave). I highly recommend them. I did give one star less because I think they are expensive, but so are all the health food type cookies. Overall, the taste is what jumps them to the top on my list and makes every other consideration immaterial. They really do taste like genuine shortbread. Very buttery and rich. Yummy! :)

I love these (and all of Pamela's) cookies! I cannot eat just one at a time. More delicious than most gluten-full cookies I know.
Soft texture and not too sweet. Good price compared to local stores.

Very Disappointing
I was so hungering for a shortbread cookie...These looked great and had a good mouth feel, but were oh so lacking in flavor...how disappointing. I've decided to make my own..yum
