Best Pancake mix and flour exchange for muffins After trying about 10 different brands/mixes for pancakes this one wins hands down. Everyone loves them and that includes all the kids that come over and don't need gluten free. Pamela's is also great for muffins and cookies. Closest to being like regular flour. Hint: I tend to pack the flour instead of sifting it and this seems to make perfect cookies etc. April 24, 2013
