Not MY Cornbread, But A Great Alternative! I love to make a good Southern-style cornbread- the sweet, buttery kind. Yum. But I have been eating gluten-free for a while now, and I really missed having a piece of cornbread. This is a great replacement! The texture is different... A little grainier than I would prefer, but most GF products are. Great taste, though, and the texture is easy to get used to. I make this into muffins, and they hold together well and LOOK fluffy and great- like a good corn muffin should! I'm loving Pamela's mixes! April 12, 2013

Works well without the sugar, too! I was concerned that this product might fall flat without the sugar included in its cooking directions. I've prepared it several times with no sugar, once even with chopped, fresh jalapenos. Delicious! February 14, 2013

Real Southern Style Cornbread! I live in the South and I am Gluten - free. One of the things I missed most was good, hot cornbread with my meals. I found it in Pamelas cornbread and muffin mix! Not dry, it's moist and the flavor satisfies my cravings. I also used it in my turkey on Thanksgiving for stuffing, everybody liked it and they had a hard time believing it was gluten-free!
