Drain liquid, rinse well to remove brine and pat dry:
Serve Hot: Place on the grill and then cut into quarters. Serve with grilled meals, roasts or chicken. For a great taste, baste artichoke bottom with butter and fill with mushrooms, chopped anchovies, meat stuffing or shellfish. For a superb vegetable, heat and serve topped with Reese Hollandaise Sauce or a lemon butter sauce.
Serve Cold: Artichoke bottoms are delicious filled with tuna salad, chicken salad, crabmeat or shrimp salad. Adds zest to green salads. Great when marinated with olive oil and red wine vinegar.
