Sam Mills Polenta Gluten Free Description
Traditional method for making polenta: In a large pot bring 1 quart of lightly salted water to a simmer. Add 1 cup of polenta in a constant but gradual stream, stirring the pot all the while with a whisk or wooden spoon in one direction until all the polenta has been incorporated into the water. Constantly stir to avoid lumps and cook on low heat, adding small amounts of hot water, if mixture gets too thick. The polenta is done when it is perfectly creamy and has attained the consistency you desire.
