Lecithin is another name for phisohatidyl choilne, one of the phosholipids. Phospholipids(Phosphatifies) are indispensable components of cell membranes and are also natural emulisifers, helping fats dissolve in water. Lecithin also contains Phosphatidial serine, phosphatidyl inositol and phospholipids ethanolamine (formerly called cephalins) which are the other phospholipids found in lecithin and cell membranes.
