If you've ever been to Cuba, you may recall a dish called "Moros y Cristianos." Translated, it means Moors and Christians; a name derived from its main ingredients, black beans and white rice. The dish originated in Spain, but the Cuban people embraced it long ago and they've made it their own. And now we're making it our own: By replacing the white rice with healthier long grain brown rice, but retaining the traditional spicy goodness of peppers, onion, garlic and cilantro. All that and a history lesson too. Such a bargain.


Directions

Stovetop Directions

  1. Combine rice, contents of seasoning packet, 2 cups of water and 2 Tbsp. of olive oil (optional) or sunflower oil (optional) into a medium saucepan. Stir well. Bring the mixture to a boil.
  2. Reduce heat (medium-low), cover and simmer 22-25 minutes or until the water is absorbed. Stir occasionally during cooking to distribute flavors.
  3. Remove from heat, stir and re-cover. Let stand for 5 minutes. Fluff with fork before serving.

Microwave Directions

  1. Combine rice, seasonings, 2 cups of hot water and 2 Tbsp. of olive oil (optional) into a microwave-safe dish. Stir well.
  2. Cover and microwave on high power for 5 minutes. Stir half-way through cooking time to ensure uniform heating of the grains.
  3. Reduce heat to medium (50%) for 24-28 minutes. Stir occasionally to distribute flavors.
  4. Remove from microwave and let stand, covered, for 5 minutes. Fluff with a fork before serving.

Just too much spices.. It wasn't hot just seemed spicy and a little to much sauce. Cooking both beans and the rice together just didn't come out as great as I thought it would. The bean came out a little undercooked. July 15, 2013
