Honey-Roasted Snack Mix
- 1 cup raisins
- ¼ cup slivered almonds
- ¼ cup pecan pieces
- ¼ cup hazelnuts, chopped
- ¼ cup sunflower seeds
- ¼ cup organic honey
- 1 tsp. butter
- ½ tsp. cinnamon
- ¼ tsp. ground cardamom
- ¼ tsp. salt
- ¼ tsp. ground cloves
- 2 tbsp lime juice (fresh or bottled)
Directions:
- Cover a baking sheet with parchment paper (spritz with cooking spray for extra protection against sticking).
- In a large skillet, melt butter over medium-high heat.
- Add organic honey and stir for about 2 minutes, or until mixture begins to bubble.
- Toss in nuts, sunflower seeds and spices. Cook for about 8 minutes or until the nuts are golden brown, stirring often.
- Stir in raisins; then spread snack mix evenly onto prepared baking sheet. Let it cool completely before serving.
