How to use your recipes: Cakes, crusts, pancakes; use 1 1/8 cups of pastry flour to replace each 1 cup of gluten flour. Cookies, muffins, and quick breads; use 1 1/4 cups of the pastry flour to replace each 1 cup of gluten flour.
You will need to add xanthan gum to the recipe when you use this flour.
How to add xanthan gum to your recipes: Cakes; add 3/4 tsp per cup of flour. Crusts; add 1/4 tsp per cup of flour. Quick breads; add 3/4 tsp per cup of flour. Cookies; add 1/2 tsp per cup of flour. Pancakes/Waffles; add 1/2 tsp per cup of flour.
Store in airtight container after opening.
