Lentils have been part of the human diet since before Neolithic times, with history of their consumption dating back as much as 13,000 years. The cultural history of lentils dates back to the Old Testament of the Bible; while in modern day India, lentils soaked in water are offered to gods in many temples. Popular in regions of Asia and the Mediterranean, lentils are often served with rice or prepared as part of a stew or soup.
Although people may think of lentils as starchy, eating them instead of bread or pasta, this legume is a multi-faceted, nutritional superstar, with 30% of lentils’ calories coming from protein. Lentils also contain rich stores of fiber, folate, vitamin B and minerals, and they’re known for their remarkable fiber and iron content.
How to enjoy them
Rinse lentils well before cooking. In a large pot, combine 1 cup of French green lentils with 3 cups of water. Bring water to a boil, reduce heat and simmer for 40 to 45 minutes, stirring occasionally, until water is absorbed and lentils are soft. Use lentils in recipes, add to soup or stew or sprinkle on salad.
