Delicious cookies and I can add whatever ingredients to vary the taste (chocolate chips, nuts, fruit).

Very versatile mix.
Divided the dough into thirds allowing three grandchildren to create their own cookie. Chocolate chunks and pecans, apricots with almonds and then dried cranberries with coconut and chocolate.
Make these cookies your own.

One the first day, these cookies are very good--couldn't tell them from the gluten ones. But as the week wore on, they got very dry--and I had them in a sealed container. By the end of the week, it was worse than eating a mouth full of sweetened flour--it dried you out worse than just a mouthful of dry flour. But if you are going to eat them all on the first day, toss in a bunch of chopped walnuts and chocolate chips and enjoy.

A great starting point cookie mix!
I made these with the addition of lemon oil and lemon juice powder for lemon coolers and these came out great. This is a great neutral mix, can add chocolate chips, fruit, extracts, oils - whatever flavors you want.
They did spread out when baking though, I would recommend making these in a whoopie pie pan to preserve the shape. Also, I found the dough to be too dry and crumbly, I worked it with wet hands to make it less crumbly. I will try adding another egg or a couple tbs water next time.
Other than that, they were great. Barely grainy at all, and they have a nice crunch to them.
