With a hand-selected blend of Arborio rice, porcini mushrooms, fragrant spices and natural flavors, you don’t need to be a celebrity chef to make the perfect pot of risotto. Enjoy the comforting flavor and creamy texture of this Italian dish as an accompaniment to any entrée.

Bring 2 quarts water or stock to a simmer reserve. Heat 2 tablespoons olive oil in a large sauce pan over medium heat. Add 1 cup Vitacost® Porcini Risotto, stir to coat thoroughly and cook for 2-3 minutes. Add 1/4 cup of reserved liquid to rice and stir until absorbed. Repeat until all reserved liquid is absorbed, rice is firm and risotto mixture reaches a creamy consistency, about 18-23 minutes. Serves 4.
Keep dry and at room temperature (59°-86°F [15°-30°C]).

My husband cooks this and on the side he sautéed portobello baby Bella mushrooms he did this inside coconut oil. I did a tiny bit of milk and topped it on this risotto. It was fantastic, and I mean fantastic. It should be in a restaurant.
