To make Sugar Cookies
1 1/4 cup Vitacost® Superfine Brown Rice Flour
1/4 cup Vitacost® Superfine White Rice Flour
1/4 cup Vitacost® Tapioca Flour
1 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon xanthan gum
1 large egg
1/4 cup + 2 tablespoons milk or milk substitute
1/2 cup unsalted butter, room temperature
1 cup chocolate chips (optional)
Preheat oven to 350°F. Mix all dry ingredients in one bowl and all liquid ingredients in another bowl, except butter which should be cur into small cubes. Cut the butter cubes into the dry ingredients using a mixer with paddle attchment or pastry blender.
Add the liquid ingredients and mix. If using chocolate chips, fold them into the mixture now. Spoon small amounts onto cookie sheet, leaving space in between. Bake for approximately 20-25 minutes or until golden brown.
Keep box dry and at room temperature (59°-75°F [15°-24°C]).
