An ancient superfood with major modern-day appeal, amaranth—a tiny “grain” that’s actually a seed—is making a comeback as a wholesome and delicious addition to a healthy diet. Naturally gluten free, protein packed (with a higher content than most other grains) and brimming with fiber, calcium and iron, this chewy, nutty-flavored seed can be served in place of rice or quinoa, simmered into a hot breakfast cereal or popped for a crunchy snack.
How to enjoy it:
To cook as a side dish or cereal, combine one cup of amaranth and 3 cups of water in a large saucepan; bring water to a boil, reduce heat and simmer for 25 minutes.
To pop amaranth, heat a pan/skillet over medium-high heat. When hot, add 1 to 1 tablespoons of amaranth, cover and shake pan back and forth, holding pan above burner. Let amaranth pop about 10 to 15 seconds, then transfer to a bowl. (Note: It burns quickly, so move fast!) Repeat until you have the amount you want. Enjoy popped amaranth as is, with toppings or over yogurt or ice cream.
