When cooked, black beluga lentils closely resemble beluga caviar, but the similarities end there. Black beluga lentils are well known for their mild flavor and hearty texture, which, unlike other lentil varieties, can withstand the heat of cooking without getting mushy. For this reason, they are often preferred when preparing pilafs, salads and soups.

Lentils have been part of the human diet since before Neolithic times, with history of their consumption dating back as much as 13,000 years. How to enjoy them
Rinse lentils well before cooking. In a large pot, combine 1 cup of black beluga lentils with 3 cups of water. Bring water to a boil, reduce heat and simmer for 25 minutes, stirring occasionally, until water is absorbed and lentils are tender.
